INGREDIENTS

Vito's grandfather was a super farmer & fisherman of Positano and Vito & his large family still has a small farm in Positano that he likes to cultivate with family & friends, when it come to food/ingredients it is good to know where they come from.

Water-Food. Good ingredients are super important, that is why since opening our first pizzeria in Woolwich in 2017 we have championed sourcing seasonal ingredients from exceptional artisan producers. When you eat at Rust Bucket Pizza Co, you support people championing our land and our planet.

IMPASTO - DOUGH

The secret to our artisan pizza is . Great Water, Great Sea Salt, Great Flour, Great Process .

 Giving the right time to bacteria present in to the yeast to do their work. We allow minimum 24 hours to our dough to ferment and mature all the way to 48 ours this allows from the great flour to be realised and to convert the sugar created during the fermentation in nice bable making the pizza much low in calorie and enjoyable. We some times have on the menu Wholemeal, Hemp pizza Dough.

POMODORI-TOMATOES

 

Tomatoes, Zucchini everything is super important and Vito makes sure that his children Nico know it well, we use mostly organic or D.O.P. tomato from around the Vesuvio area were the soil is reach of mineral combined with the radius s makes the tomato even tastier. Coarbarino & Yellow tomato from Ercolano.

MOZZARELLA - CHEESES

You need to know where the milk comes from. Vito children, Nico & Assunta know to well how to make Mozzarella too to keep quality you need to know the process. 

We have proud ourself of using when possible local organic milk from cow that spend their day enjoying the country side grass in the UK and italian mozzarella to from Monti Lattari above Positano. Burrata often from Italy and many other special of the day cheeses like della Fonte Pecorino & local British one too. Keep an eye on the guest Cheese.

IL VINO - THE WINE

Wine making was a big part of Vito Marino growing up as he helped his grand father on the wineyard in Positano making Natural Wines as such Vito works with producer that endorse organic or biodynamic process and share the same ethos. Always natural, organic and/or biodynamic. Our producer committed to looking after & protect the land, keeping it intact for future generations. Mostly Italian and when possible from all over the world whilst championing sustainability across the community .
